The ever-dapper Drappier vintage Champagne (which was just released) is sure to make all of your wildest dreams come true.
This sustainable Champagne house is the first to be carbon-neutral with 6 hectares of organic grapes. The winery produces a variety of their own sugars for dosage aged for 20 years in oak. Cool-climate caves, with automatic a/c, are attributed to the monks that started the winery in 1152.
And the pairing... premium dark Belgian chocolate with a frame of date powder and gold dust, and a ruby chocolate and peanut butter drizzle, predominately pinot noir with a lingering finish, this lovey wine has it all.
