This sustainable Champagne house is the first to be carbon-neutral with 6 hectares of organic grapes. The winery produces a variety of their own sugars for dosage aged for 20 years in oak. Cool-climate caves, with automatic a/c, are attributed to the monks that started the winery in 1152.
And the pairing... premium dark Belgian chocolate with an all-over dusting of peanut butter powder and a frame of gold dust with date essence, all wrapped up with a ruby chocolate drizzle. Predominately pinot noir with a lingering finish, this lovely wine has it all.
