From Oregon with love! A versatile balanced sparkling. I served it with an entire mushroom meal-from soup to nuts and the flavors melded perfectly. Acidic enough for a cream-based soup, with hazelnuts and porcinis which inspired the chocolate pairing.
Dark Belgian chocolate gave the best mouthfeel, the hazelnut candy crunch made the whole thing velvety and then the cherry on top-pure cherry powder, pulled out the fruit in the wine.
