While many varietals can be grown in many climates the world over, the Pinot Noir grape needs just the right climate, just the right soil, and just the right care to flourish. This specificity is one of the reasons this is such a well-esteemed grape. Some Pinot Noirs made in Burgundy, France, are the most sought-after and collectable wines in the world. In recent years, Pinot Noir has grown in popularity in New Zealand, California and especially in Oregon. When young, Pinots tend to have flavors and aromas of fruit and spice young, but as they age, more earthy notes come forward, and the wine grows more complex.
